The first time I made this banana bread, my neighbor came over because the smell of the cooked bananas and walnuts reached her house. There is something about baking that makes houses more cozy and inviting.
Here is the easy recipe for making this banana bread:
You will need:
2 ripe bananas
2 cups all purpose flour
1/2 brown cane sugar
pinch of salt
1/2 cup oil (coconut, sunflower, canola)
2 cups nut milk
1/2 nut yogurt
1 tsp baking soda
1 tsp baking powder
1 tsp pure vanilla extract
1/2 tsp ground cinnamon
1 tsp apple cider vinegar
1/2 cup walnuts
Garnish (optional)
How to make it:
Heat the oven to 170c. only turn the bottom fire in the oven.
Mix dry ingredients together in a bowl. I like to sift the flour with the baking soda and baking powder so they are evenly distributed and have more air.
Mix wet ingredients starting with mushing the bananas with a fork.
Make a whole in the middle of the dry ingredients and drop the wet ingredients in the middle. Adjust how moist your dough is by adding little by little of nut milk if needed.
Add the 1/2 cup of walnuts. Break the walnuts lightly before you add them to the batter.
Transfer the batter into a lined up bread pan with baking paper. Tap it to release the air bubbles then add the garnish on top of your desire either chopped banana or walnuts or both! Press gently on the top batter.
Put it in the oven for around 40 minutes or until a toothpick comes out clean. Turn the last 5 minutes the top of the over to give the banana bread the tan it needs. And Enjoy!
